Walker's Gluten-Free Shortbread
Am I the only person out there that likes butter cookies?
I have such fond memories of eating butter cookies when I was little and remember playing with Royal Dansk tins, which I hid all sorts of random memorabilia in during my childhood.
My experience with butter cookies was limited to Royal Dansk and I only got clued into Walker’s Shortbread when I was much older, but by that time I was already gluten-free and never had the chance to try them… until now. When the opportunity came up to sample their new gluten-free shortbread cookies, I pounced on it. When they arrived on my doorstep I squealed like a schoolgirl. Mr. misterbelly? Not so much. He turns his nose up at any cookie that isn’t soft and can’t understand my "old lady" love for butter cookies.
The Walker’s cookies were exactly what I would expect from a tasty shortbread cookie: buttery, flaky and dense. They are definitely the grownup version of Royal Dansk cookies and are extremely rich, but that’s what you want out of a butter cookie. Have them with a bit of coffee or tea and you’ll feel like you’re the Queen of England.
The only downside is the packaging doesn’t keep the cookies very fresh after they are opened, so I ended up only having a few before having to toss the package. Probably better off anyway or I would have devoured them all!
