Glutino Gluten-Free English Muffins
Very few breakfast foods nurse a hangover better than a bacon, egg and cheese on a roll, or BECOR as they are known in my house. If you're really ambitious you can make gluten-free biscuits using Bisquik and really go for the gusto on the morning gut-bomb, or if you're lazy like me, you can opt for Glutino English-style muffins.
I say English-style because they really aren't anything like an English muffin, but they are actually pretty damn good. After drinking a few glasses of cheap wine one Friday evening, I woke up with a righteous headache and a yearning for a BECOR, but I'm trying to be good about eating too much fatty food so I opted for black forest ham instead of bacon and decided to slather my sandwich with lingonberry preserves, because I could.
You know what? It was freaking fantastic.

Gluten-Free Ham Jamwich (serves two)
- 2 Glutino rolls, toasted and buttered
- 2 eggs
- 2 slices of cheese (I used Vegan cheese)
- 2 slices of ham
- Fruit Preserves (I used lingonberry)
Add 2 tablespoons of butter to a frying pan and melt butter over medium heat, but do not brown. Add ham slices to pan and fry ham, flipping over after 2-3 minutes until slightly browned on both sides. Move ham to a plate and prepare eggs. For fried eggs, add a little more butter to the same pan you cooked the ham in and crack eggs into the hot pan. Sprinkle a liittle salt on top of the eggs and cook until whites are completely opaque.
Put your ham on top of the cheese (you can pre-melt the cheese in an oven or toaster oven on top of your toasted roll if you want) add your jam on top of the ham and then gently lay your cooked eggs on top of the jelly. Add the top piece of the bun and chow down.
