Chicken & Grape Salad on Schar Baguettes

Spring is in the air, can you feel it? The warm weather inspired me to make a light and refreshing sandwich, something a little more "springlike" than my usual meat and bread fare.  

Back in my gluten-eating days, I was obsessed with a baguette sandwich from Pret a Manger filled with chicken salad and red grapes, which whenever I mention it to people, usually has them giving me the big eye, little eye, but I swear, it's a divine combo. 

The dill, scallions and celery really combined with the grapes and chicken make for a harmonious balance of delciousness. Schar baguettes are my favorite not only for texture and ease of preparation, but also for the fact they are lactose-free, and are perfect for this particular sandwich, providing an awesome crunchiness that feels hearty.

I've made everything from Banh Mi to garlic bread using the Schar baguettes, and they hold up beautifully everytime. They have a slightly sweet taste to them that I really enjoy too. 

I really hope you like this recipe, it's my absolute favorite for chicken salad and couldn't be easier to make.

Chicken & Grape Salad 

  • 2 chicken breasts, seasoned with salt & pepper
  • 2 celery stalks, chopped or cut into half-moons
  • 3 scallions sliced
  • 1 cup of grapes, halved
  • 1/4 cup mayo
  • 1/8 cup or less of dill 

Start by grilling the chicken until thoroughly cooked. When the chicken is cooled, cut into cubed pieces and put into a bowl. To the bowl of chicken add the celery, scallions, grapes, mayo and dill. Stir to combine. Add salt and pepper to taste. Serve on your bread of choice. Voila!
