Easy Weekend Brunch

I've been a  little lax in posting lately because I'm enjoying a vacation out on the West coast, with a stop in Vegas, which if you haven't been, is a must-visit at least once.  I love everything about it, the excess, the service, and the amazing food.

Some of the most amazing restaurants can be found right here including not one, but two Joel Rubuchon restaurants.  While I love upscale French, my favorites are French bistro's, like Thomas Keller's Bouchon. I've been to Bouchon before and loved it so much that I couldn't wait to come back.  They have a wonderful brunch which includes an amazing corned beef hash, which I enjoyed today with poached eggs and an insanely delicious butter sauce.

Brunch, is my absolute favorite no matter where I am.  I love making brunch-style breakfasts at home on the weekends and my brunch today reminded me of a recent breakfast I made recently that included a fried egg, polenta and a slice of ham.  It was incredibly easy and absolutely delicious.

All you need to do to make it, is prepare the polenta according to the package instructions, adding in a little parmesan cheese and butter.  Shape the polenta into round cakes and deep fry them for a few minutes in oil until they are lightly golden.  The eggs and ham can be prepared to your liking, but for this option, I fried the eggs sunny side up and fried a piece of ham steak.  It sounds like a lot of fried goodness going on, but none of it was greasy or overly heavy.  Definitely worth a try if you are looking for something new.
