Mother's Salted Butter Rice Cakes

Who knew rice cakes could taste so good?  Scratch that, who knew Quaker Oats could make gluten free rice cakes that taste really good?!  Disguised under the name "Mother's," I had no clue that the rice cakes I bought were actually under the Quaker Oats umbrella until I searched for them online.  I also discovered that many of the Quaker Oats rice cakes, like my favorite Chocolate Crunch flavor are also gluten-free.  Who knew?!

I like rice cakes, but I don't buy them very often because they are usually bland and tough. The Mother's Salted Butter rice cakes are actually really good and not bland or tough at all. The first bite really brought to mind buttered popcorn for me - kind of similar to the buttered popcorn you'd get at a movie theater, but less in your face butter flavor.  The cake itself is crunchy, and light.  Which is refreshing, considering a lot of rice cakes can end up tasting like cardboard. Now I just need to figure out what kind of fun toppings I can add to my rice cakes.  I usually put peanut butter on them, but not sure that would go with the salted butter flavor.  Any suggestions?
