The news of Chelsea Clinton's gluten-free wedding cake has been spreading like wildfire around the internet. Her wedding to 32-year-old Goldman Sachs investment banker Marc Mezvinsky is set to take place this Saturday and will feature vegan-fare as well as gluten-free options, including a gluten-free wedding cake. Chelsea has been following a vegan diet since she was very young and is also reportedly allergic to gluten, thus the gluten-free wedding cake!
Congrats to them both, and I hope they enjoy the wedding cake. I had an AMAZING gluten-free wedding cake at my wedding nearly 5 years ago, made by the supremely sweet and wonderful women at Gluten Free Creations Bakery. It was a dark chocolate cake, with raspberry filling and chocolate ganache - YUM. If you're ever in Phoenix, you have to stop into their bakery, they serve a variety of baked goods and will create something special order if you request it. My wedding cake was the first they did, and they did a fabulous job. :)
*Update! Pics have been released of Chelsea's wedding cake. Her nine-tier cake was reported to have sat four feet tall and was made with 360 organic eggs, 50 pounds of sugar, 45 pounds of gluten-free flour, 30 pounds of butter and bittersweet chocolate, and was decorated with about 1000 sugar flowers!
