It was a semi-rough morning on Friday, one of those days where you just want to sleep in until Noon and luxuriate under the covers. Unfortunately, it was a work day for me, so I had to get out of bed at 7 and make sure the bambino got her beloved breakfast of champions – pancakes and soy milk. Which left me standing around wondering what I was going to feed myself.
I had a box of Udi’s Double Chocolate Muffins sitting on the counter that I bought, but hadn’t tried yet so I figured why not? I popped one in the microwave to heat it up after seeing a tweet from Udi’s with heating suggestions. They suggest 10 seconds, but my microwave is janky so I had to leave it in for 20. What emerged was a chocolaty, gooey, delicious confection that has no right masquerading as a muffin, because let’s face it – it’s dessert. The texture is like a dense piece of cake, and the flavor is very much like a piece of chocolate cake, but not overly sweet. They really are perfect as a dessert, or even a breakfast treat on mornings where you need a little pick-me-up. I gave a piece to the little one and she loved it, but who wouldn’t love a double chocolate muffin? Even the most discriminating gluten eater would have a hard time distinguishing these from the real thing!
