I don't know what it is about fruit and cookies, but I seriously love it. Growing up I had an obsession with "cookies with the red dot," which were shortbread cookies with a sticky strawberry or raspberry jam type filling in the middle. I apparently have never grown out of that fondness, because whenever I see cookies that are similar, I buy them right away!
There are a ton of gluten-free cookies out there, I can't even count all the different varieties I've tried. A few brands stand out to me including Whole Foods cookies, Wow Baking Company, Kinnikinnick and now My Dad's Cookies. I work in Manhattan, which means I'm lucky enough to have access to a plethora of gluten-free foods at niche stores and restaurants. Mozzarelli's, gluten-free pizza shop loved by many, sells a variety of sweets, including a huge shelf of My Day's Cookies in a bajillion varities. I saw the Raspberry Linzer cookies there and the 5-year-old that lives inside of me instantly said "Want." I know better than to argue with an irrational inner-child, so I picked these up and bought them immediately.
The cookie itself is a shortbread-style cookie shaped like a bow-tie with raspberry jam on either side and a drizzle of chocolate on top. The cookie is buttery, and tastes just like regular shortbread, but the raspberry jam is what makes it so awesome. It lends the perfect fruitiness to the cookie, without overpowering it or being overly sweet. I ate 3 or 4 before I even got them home! They brought me back to the 80's, when my mom would bring home cookies from the Italian bakery, including my absolute favorites Rainbow Cookies, but I digress. My Dad's Cookies has a ton of different varieties, most of which you can order from their website, or if you're in NYC, just stop by Mozzarelli's and pick up a box from their wall of gluten-freedom (and don't argue with your inner-child when it wants more than one box)!
