Happy Mother’s Day!

Time seriously flies by faster and faster every year.  Just last year I was celebrating my first Mother’s Day and now my little one is a year and a half (with the spunk of a 5 year old)!

I’m not really one to get sucked into the holidays that designate a specific time during the year to celebrate love or show appreciation for your mother. I think both should be done year round, but it is nice to have an excuse to be wooed with flowers, chocolates and gifts from the hubby.

After a gorgeous day soaking up sun at the beach and taking the little one to the playground, the perfect end to the day was being surprised with a box of gorgeous strawberries, and chocolate to make into dip.

Decadent, delicious and easy. Indulge yourself today mama’s, you deserve it!

Chocolate Dipped Strawberries

  • 1 carton of fresh strawberries
  • 1 12 0z bag of chocolate chips (I used Ghiradelli)
  • 1 tsp vegetable oil

Wash strawberries and dry completely.  Heat chocolate chips and oil in a double boiler until chips are completely melted.  Dip strawberries one by one into chocolate until coated.  Lay on wax paper.  Put dipped strawberries into fridge for 5-10 minutes until chocolate sets.

You can have some fun with adding toppings to the strawberries too.  I had some shredded coconut on hand so I sprinkled a little on a couple of the strawberries. Totally yummy.
